Equipment

  • Mason jars or lidded containers - Wide-mouth jars are easiest to fill, stir, and eat from
  • Glass mixing bowl - For combining everything before portioning
  • Blender - A small personal blender is perfect for pureeing the peaches into the base
  • Measuring cups and spoons - For consistent results batch to batch
  • Silicone whisk or spatula - To fully suspend the chia seeds so they do not clump at the bottom
  • Cutting board and paring knife - For pitting and dicing the fruit

Ingredients

  • 1½ cups old-fashioned rolled oats - 135g; not quick or steel-cut
  • 1½ cups milk of choice - 360ml; dairy, unsweetened almond milk, or oat milk all work
  • ¾ cup plain Greek yogurt - 170g; use dairy-free yogurt to keep it vegan
  • 3 tablespoons chia seeds - 36g; they thicken the oats as they soak and add fiber
  • 3 tablespoons pure maple syrup - 45ml; or honey, adjusted to how sweet your peaches are
  • 1½ teaspoons vanilla extract - Rounds out the fruit and makes it taste almost like peach pie
  • ¾ teaspoon ground cinnamon - Warm background note that pairs with peach
  • ¼ teaspoon fine salt - Small amount, big difference; sharpens every other flavor
  • 3 medium ripe peaches, divided - 2 for blending into the base, 1 diced for folding in and topping; when fresh are out of season, use frozen peaches, thawed and drained
  • chopped toasted pecans - Optional topping
  • extra diced peach - Optional topping
  • light drizzle of maple syrup - Optional topping

Instructions

  • Rinse all 3 peaches, cut in half, twist to separate, and remove the pit. Roughly chop 2 peaches for the blender and dice the remaining peach into small, even pieces, splitting the diced peach into two portions: one to fold in now, one to save for topping.
  • Add the 2 roughly chopped peaches to the blender along with the milk, maple syrup, vanilla, cinnamon, and salt. Blend for about 20 to 30 seconds, until smooth and the base looks like a thin, pale peach shake.
  • In your mixing bowl, add the rolled oats, chia seeds, and Greek yogurt. Stir them together briefly so the yogurt starts to coat the oats and the chia seeds stay separated.
  • Pour the blended peach base into the bowl with the oats, chia, and yogurt. Stir well for a full 20 to 30 seconds, scraping the bottom, until there are no dry pockets and no clumps of chia. Fold in the first portion of diced peaches and taste, adding a little more maple syrup if your peaches were on the tart side.
  • Divide the mixture evenly between 2 jars or lidded containers. Give each jar one more quick stir so the chia does not settle, then seal and refrigerate for at least 6 hours, ideally overnight.
  • In the morning, stir each jar and loosen with a splash of milk if the oats are thicker than you like. Top with the reserved diced peaches, a few chopped toasted pecans, and a light drizzle of maple syrup, then eat cold straight from the jar.

Notes

  • Use ripe peaches that give slightly when you press near the stem; underripe peaches stay tart and starchy even after soaking.
  • Blend part of the fruit into the base rather than just chopping it, so every spoonful tastes distinctly of peach.
  • Reserve half the diced peach and add it just before eating, since fruit that soaks all night loses its fresh snap.
  • Stick with old-fashioned rolled oats; quick oats turn to mush and steel-cut never soften properly in a cold soak.
  • Stir hard right before chilling so the chia seeds are fully dispersed; chia that settles turns into a gel puck at the bottom of the jar.
  • Adjust sweetness to the fruit, since very ripe peaches may need almost no added syrup and cold dulls sweetness.
  • Let the oats soak at least 6 hours for the right texture; anything shorter and the oats stay a little chalky.
  • Store sealed jars in the refrigerator for up to 4 days, keeping the fresh peach topping separate and adding it each morning.
  • Freeze portions in airtight containers for up to 2 months and thaw overnight in the fridge before eating.
  • To eat warm, microwave in a bowl for 45 to 60 seconds, stir, and add the fresh peach after heating.
