Ingredients
  

  • 2 cans chickpeas - 15 oz / 425g each, drained and rinsed
  • 1 English cucumber - about 300g, diced
  • 1 pint cherry tomatoes - about 300g, halved
  • 1/2 red onion - medium, finely diced
  • 1 cup kalamata olives - 150g, pitted and halved
  • 1 cup feta cheese - 150g, crumbled
  • 1/2 cup fresh parsley - chopped
  • 1/4 cup fresh mint - chopped, optional
  • 2 tablespoons capers - drained
  • 1/3 cup extra virgin olive oil - 80ml
  • 3 tablespoons red wine vinegar - 45ml
  • 1 lemon - juiced, about 2 tablespoons or 30ml
  • 2 cloves garlic - minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt - or to taste
  • 1/4 teaspoon black pepper - or to taste

Instructions
 

  • Rinse and drain chickpeas, then pat them thoroughly dry with a clean towel.
  • Dice the cucumber, halve the cherry tomatoes, and finely dice the red onion.
  • Add the halved olives, crumbled feta, chopped parsley and mint, and drained capers to the bowl.
  • Whisk together olive oil, red wine vinegar, lemon juice, minced garlic, oregano, salt, and pepper until combined.
  • Pour dressing over salad, toss gently, and refrigerate for at least 15 minutes before serving.

Notes

  • Always dry the chickpeas well after rinsing. Wet chickpeas dilute the dressing and leave the salad watery.
  • Use English or Persian cucumbers instead of standard slicing cucumbers for fewer seeds and a firmer bite.
  • Salt the diced onion lightly and let it sit for a few minutes before adding to soften the sharp bite.
  • Don't skip the resting time in the fridge. The flavors need at least fifteen minutes to come together properly.
  • If meal prepping, keep the dressing separate and toss it in right before eating to prevent the vegetables from softening too much.
  • Taste and re-season right before serving, since chilled ingredients can mute the salt and acid.
  • Use fresh lemon juice rather than bottled for a noticeably brighter flavor.
  • For a vegan version, skip the feta cheese entirely or swap in a plant-based alternative.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days.
  • If the salad seems dry after a day or two, add a small splash of olive oil and lemon juice to freshen it up.
