Ingredients
  

  • 2 cups nonfat dry milk powder - 240g
  • 1 cup unsweetened cocoa powder - 85g, natural or Dutch-processed
  • 1 cup granulated sugar - 200g
  • 1 cup powdered non-dairy creamer - 120g, optional
  • 0.5 teaspoon fine salt

For Serving

  • 0.5 cup mini marshmallows - optional

Instructions
 

  • Sift the cocoa powder through a fine-mesh sieve into a large bowl, pressing with a spoon to break up clumps and discarding any hard lumps.
  • Add the dry milk powder and non-dairy creamer to the bowl with the sifted cocoa.
  • Add the sugar and salt to the bowl.
  • Whisk all the ingredients together vigorously for 1-2 minutes until the mixture is a uniform light brown color with no streaks.
  • Use a funnel to transfer the mix into an airtight glass jar, pressing down gently to remove air pockets, and seal tightly.
  • Store the sealed jar in a cool, dry pantry away from heat and direct sunlight, labeling with the mixing ratio.
  • To serve, add ⅓ cup of mix to a mug and pour in 8 ounces of hot milk or water, stirring constantly. Top with marshmallows if desired and serve immediately.

Notes

  • Sift the cocoa powder every time to avoid a gritty texture in the finished drink.
  • Use hot, not boiling, liquid for the best dissolving results; simmering water or milk prevents scalding the dry milk and creamer.
  • Stir while pouring the hot liquid to keep the cocoa from clumping at the bottom of the mug.
  • Adjust sweetness by reducing the sugar to ¾ cup for a darker, less sweet cup.
  • This recipe scales up easily; double or triple it for larger batches.
