Ingredients
  

  • 1/2 cup mayonnaise 120ml, use full-fat mayo for best texture
  • 2 tablespoons sweet chili sauce 30ml
  • 1 tablespoon sriracha sauce 15ml, adjust to taste for preferred spice level
  • 1 tablespoon honey 15ml
  • 1 teaspoon rice vinegar 5ml
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • salt pinch

Instructions
 

  • Add mayonnaise and sweet chili sauce to a medium mixing bowl.
  • Add sriracha sauce and honey to the bowl.
  • Sprinkle in garlic powder, paprika, rice vinegar, and a pinch of salt.
  • Whisk for 30-45 seconds until completely smooth with no streaks. The sauce should be thick enough to coat the back of a spoon but still pourable.
  • Taste and adjust seasonings as needed - add more sriracha for heat, honey for sweetness, or rice vinegar for tanginess.
  • Transfer to an airtight container and refrigerate, or serve immediately. Stir before using if refrigerated.

Notes

  • Use room temperature ingredients for the smoothest consistency and easiest whisking.
  • Start with less sriracha than you think you need - you can always add more but can't take it out.
  • For best flavor, let the sauce sit for at least 30 minutes before serving to allow flavors to meld together.
  • Store in the refrigerator for up to 10-14 days in an airtight container. Sauce will thicken slightly when cold.
  • For a milder version, reduce sriracha to 1 teaspoon and increase honey to 2 tablespoons.
  • For extra spicy, double the sriracha and add a pinch of cayenne pepper.
  • Kewpie mayonnaise creates a richer, creamier sauce than regular American mayo.
  • Thin the sauce with water, rice vinegar, or lime juice if using as a salad dressing.
  • Use a clean spoon each time to prevent introducing bacteria and extend shelf life.
  • Don't freeze - mayonnaise-based sauces separate and become grainy when thawed.
