Instructions
Slice the baguette into ½-inch (1.25 cm) thick slices using a serrated knife.
Combine minced garlic with 3 tablespoons (45 ml) of extra virgin olive oil, salt, and black pepper in a small bowl.
Brush one side of each bread slice generously with the garlic oil mixture using a pastry brush.
Preheat your air fryer to 375°F (190°C) for 3 minutes.
Arrange bread slices in a single layer, oil-side up, and air fry for 6-8 minutes until golden and crispy.
In a large bowl, combine quartered cherry tomatoes, chopped Kalamata olives, chopped sun-dried tomatoes, crumbled feta, fresh basil, and fresh oregano.
Add balsamic vinegar, 1 tablespoon (15 ml) of olive oil, lemon juice, red pepper flakes (optional), and salt and pepper to taste. Mix gently to combine.
Spoon the Mediterranean topping generously onto each crispy bread slice.
Drizzle with balsamic glaze and garnish with fresh basil leaves and extra crumbled feta, if desired.
Arrange on a serving platter and serve immediately while the bread is still crispy.
Notes
Choose a crusty French baguette for the best results; avoid soft sandwich bread which gets soggy.
Drain your tomatoes, olives, and sun-dried tomatoes thoroughly to prevent a soggy topping.
Let the topping marinate for 5-10 minutes before serving to allow the flavors to meld together.
Do not assemble the bruschetta more than 15-20 minutes before serving to maintain crispiness.
Store leftover bread slices and topping separately in the refrigerator; the topping will keep for up to 3 days.
Reheat leftover bread in the air fryer at 350°F (175°C) for 2-3 minutes to restore crispiness.
For a vegan version, omit the feta cheese and use cashew cheese or nutritional yeast instead.
Try adding chopped roasted red peppers or marinated artichoke hearts to the topping for extra Mediterranean flair.
For a spicy kick, double the red pepper flakes or add diced jalapeños to the topping mixture.
Use fresh herbs for the best flavor; dried herbs will not give you the same bright, fresh taste.
