This Spanish-inspired sandwich gets perfectly crispy, golden bread with molten, gooey cheese inside thanks to the air fryer. No butter pooling, no greasy pan, just pure toasted perfection in under 10 minutes.

Ingredients
4sliceswhite sandwich bread - thin-sliced, about 1/2 inch or 1.3 cm thick
4-6slicesquality ham - about 4 oz or 113g total, thinly sliced
4slicesSwiss cheese - or Gruyère, about 3 oz or 85g total
2tablespoonsunsalted butter - 28g, softened to room temperature
Dijon mustard - optional, about 1/4 teaspoon or 1g per sandwich for extra flavor
Instructions
Remove butter from refrigerator and let sit at room temperature for 10-15 minutes until soft but not melted. Lay out bread slices on a clean cutting board.
Spread about 1/2 tablespoon (7g) of softened butter on one side of each bread slice, covering the entire surface right to the edges. The buttered side will be the outside of the sandwich.
Place two bread slices on your work surface with buttered sides facing down. If using Dijon mustard, spread a thin layer on the unbuttered side of the bottom slice. Layer 2-3 slices of ham, then 2 slices of Swiss cheese on top. Top with remaining bread slices, buttered side facing up.
Secure with toothpicks if the filling slides around. Preheat air fryer to 370°F (188°C) for 3-4 minutes while finishing assembly.
Place assembled sandwiches in the air fryer basket in a single layer, leaving at least 1/2 inch (1.3 cm) of space between them for air circulation. Cook for 4 minutes without opening the basket.
Carefully open the basket, remove toothpicks, and use a spatula to flip each sandwich. Reinsert toothpicks if needed. Cook for an additional 3-4 minutes until both sides are golden brown and cheese is melted and starting to ooze at the edges.
Remove sandwiches with a spatula and place on a cutting board. Let rest for 1-2 minutes to allow cheese to set slightly. Remove toothpicks, cut diagonally in half, and serve immediately.
Notes
Always use room temperature butter for the easiest spreading and most even coverage. Cold butter tears bread, and melted butter makes bread soggy.
Choose bread that's about 1/2 inch (1.3 cm) thick. Regular sandwich bread works better than thick artisan loaves which won't crisp properly.
Don't overfill your sandwiches with too much cheese or ham, which causes spillage and uneven cooking.
Spread butter to the edges of the bread to prevent corners from burning while the center stays pale.
Watch during the last minute of cooking as different air fryers can run slightly hotter or cooler.
For a turkey version, replace ham with thinly sliced turkey breast and use provolone cheese instead of Swiss.
For a Mediterranean twist, add sun-dried tomatoes, fresh basil leaves, and use mozzarella with prosciutto.
Store cooled sandwiches in an airtight container in the refrigerator for up to 2 days. Reheat in the air fryer at 350°F (177°C) for 3-4 minutes, flipping once.
Avoid microwaving leftovers as it makes the bread soggy and cheese rubbery. Always reheat with dry heat methods.
Let sandwiches rest briefly before cutting to allow the cheese to set slightly and prevent a gooey mess.
